I bought my T8 in March 2015 and it is running the lastest firmware (build number KOT49H.20160414 testkeys). I would like to do a factory reset (according to a Droidbox video, it seems like a piece of cake). Now I wonder if (after the reset) my T8 will boot with the latest firmware or with the firmware as it was running in March 2015.

Excuse the delay with this response... Did you post on YouTube recently? Just in case that wasn't you...

After an OTA update, only the new firmware exists on your device, so if you carry out a factory reset, you will definitely still have the newer firmware in place.
Any applications included in the new firmware will also be re-installed (check the /system/preinstall folder to check what they are for certain).
